Why does my child keep mixing up mouse and monitor?

Both start with the same sound, which is the single most common Grade 1 error here. Saying 'monitor - the one you look at' every time you read the word clears it up faster than correcting the written answer.

Should I teach typing at this stage?

Not formal touch typing. Finding a named letter on the keyboard is the Grade 1 skill; correct finger placement is usually introduced around Grade 3 or 4.

Is a tablet fine instead of a desktop computer?

For the screen and touch ideas, yes. For keyboard and mouse questions a laptop helps, because a tablet has no separate mouse to point at.
