My child adds when they should multiply. How do I fix it?

Have them draw the groups. Four boxes of three pencils drawn out makes the difference between 4 + 3 and 4 x 3 immediately obvious.

Is the grid or box method acceptable?

Yes, if the school teaches it. What matters is that the method is used consistently and the answer can be explained.

Why practise the 9 times table pattern?

Because the digits of each answer add to nine, which gives your child a quick way to check that 9 x 7 is 63 and not 62.
